Autumn is about pumpkin everything. Pumpkin patches, pumpkin carving, pumpkin coloured leaves, pumpkin coloured clothes, pumpkin chais, pumpkin baked goods, and such and so forth.
This weekend I decided I would bake something tasty and autumn inspired. Since it is Thanksgiving here up north, everyone else around me has been feasting on pumpkin pies. I was in the mood for something else though. So, behold, the pumpkin spice cupcake with vegan cream cheese frosting!
The beauty of pumpkin, is that it makes a brilliant replacement for oil in cake and loaf recipes. Therefore, all I had to do was take my staple vanilla vegan cupcake recipe, and replace the oil with some pumpkin puree. I also ground in whole nutmeg, cinnamon, cloves, ginger, and cardamon. These little guys contain a ton of autumn warmth.
