Soup Always and Forever

It is now December and everyday is all about soup. I know we have talked about soup before, but most of my wintery nights have been revolving around Twin Peaks, dark beer, and slurping soup in old man sweaters, so I feel it is necessary. I have noticed a lot of wintery soups lately including ingredients like potatoes, leeks, parsnips, and other root vegetables lately. However, I start to get grossed out at the part when people start blending it. So instead, I have been using those same kind of ingredients, but leaving all of my favourite vegetables in tact. And sometimes adding chickpeas because chickpeas belong in every soup.

The Coziest Soup:


2 cups of leeks, cleaned well and chopped
3 cloves garlic, minced
1 tsp salt
1 tsp rosemary
1 tsp thyme
1/2 tsp of cumin
1/2 tsp cracked pepper
6 cups veggie broth
1 large carrot, peeled and chopped
1 large parsnip, peeled and chopped
2 stalks chopped celery
2 medium sized potatoes, diced
1 19 oz can chickpeas, rinsed and drained well
1/2 bunch kale, chopped

Heat olive oil in large soup pan and leeks until they soften. Add garlic, and when almost browned, add herbs and spices. After about 30 seconds, deglaze with broth. Add carrots, parsnips, celery, potatoes. Bring to a boil, leaving covered until you add the chickpeas after a few minutes. Let cook until you can pierce root vegetables with a fork. Bring down to low heat, toss in kale, and let simmer for five minutes. I keep this soup really simple with a veggie or herb broth, and let my dining pals add their own Braggs, white wine, lemon juice, hot sauce, whatever they’d like to make this soup their own. There is really nothing like it after a blistery cold day outside. I might consider adding brussel sprouts next time. I was out at a restaurant and discovered that brussel sprout and sausage soup exists for omnivores so I am considering exploring that next time. Anyways, I have to go away and hibernate with soup some more. Slurp away, friends.
