
For this reason, I decided my frozen treats would have to include coconut milk. I’ve eaten some pretty bomb desserts lately including fruit AND creamy goodness, so decided to create my own. Then, I decided that wasn’t enough, so went onwards to make fudgesicles as well. The ingredients in these are simple, clean, and easy. These are the recipes for the two I made, but I plan to try chai, or blackberry basil next! Also, I suppose these could very easily be made with “raw” ingredients, if you’re into that.
1 can of full fat coconut milk
1/4 cup agave nectar
1/4 cup unsweetened cocoa powder
2 heaping tablespoons almond butter (alternately you could use peanut butter, hazelnut butter, or omit this ingredient if you’re allergic!)1. In a blender, combine coconut milk, agave, cocoa powder, and almond butter, mixing until smooth with no clumps.
2. Pour into moulds, and let freeze (at least five hours, I’d say)!
Coconut Berry-sicles
3-4 tbsp agave nectar (to taste)
handful each of your favourite fruit (think berries, chopped mango, peach slices, etc)1. Mix together coconut and sweetener
2. In popsicle moulds, place a couple pieces of fruit. I chose to use frozen raspberries and blueberries. Pour in some coconut milk mixture to cover them, then stack some more fruit on top and repeat. Do this until mould is full.
3. Place your popsicle sticks in when finished, and pop in the freezer until completely frozen!
My popsicle moulds are fairly large, so each recipe makes about 6. However, they would probably make about a dozen in the other moulds I own…I trust you to use your judgement!
So, there you have it my darlings. A delicious way to combat this gnarly heat and satisfy any ice cream/popsicle craving you might have. I don’t know about you guys, but investing in this popsicle moulds will save me many trips to the local organic market(for awhile they were starting to think I worked there) and this way I probably won’t go through a tub of vegan ice cream per day. My only problem is, I don’t know what to call these, officially. Are they popsicles, or are they ice cream? Are they creamsicles?! Babe-sicles? Cocosicles?!?!? HALP!

Ah man, I would have killed to have one of these on Tuesday! I totally need to get me some popsicle molds before the next heatwave. Oh and I’m gonna go with creamsicles on this one 🙂
