September, French Toast, and Vegan MoFo

Happy September 1st everyone!

This day is significant to me for a number of reasons. I will list the reasons because I know you’re all dying to know….

1. Rent is due the first of the month. I actually just remembered that, so thanks blog.
3. This is the first time ever I will be participating in Vegan MoFo. From what I understand, the premise of vegan MoFo is to challenge oneself to post 20 days of the month. I will be releasing my themes as I go, but I am considering talking about it my first post.

I know that one of my themes for Vegan MoFo will definitely include vegan brunch(!!!) because it’s my favourite! Twice in one week recently, the gentleman and I had a vegan pancake party using my favourite recipe that I have undoubtedly posted about before.  So, when my lovely friend invited me for a two person (plus kitties) brunch party over the weekend at her house, I decided we should switch it up with some French Toast and homemade chai. Also featured were some fabulously roasted potatoes because brunch feels a little wrong wifout them.

Here is the super easy French toast recipe I usually use:

Half a loaf slightly stale bread (I had delicious cinnamon loaf!)
1 cup vanilla soy milk
2 tbsp agave nectar
2 tbsp flour (I like chickpea flour, but you can use regular flour too!)
1 tbsp nutritional yeast
2 tsp cinnamon
1 tsp nutmeg
pinch of salt

1. Whisk together all ingredients but bread. Some lumps are okay with the flour, but try not to leave too many!
2. Place bread in a shallow baking pan so that you can cover with your mixture! Pour mixture overtop, then flip over to make sure they are completely coated. (This is why slightly stale bread is so important or else your french toast will end up pretty soggy)
3. In your favourite frying pan, heat your favourite oil (mine is coconut or sunflower) on medium/high setting. You want your pan reasonably coated. BE REASONABLE HERE FOLKS.
4. Cook for a couple minutes on each side until golden.

If you want everyone to be served at the same time, my favourite thing to do is heat my oven on its lowest setting, and keep my French Toast or Pancakes in the oven until everything is ready!

Top with your favourite goodies, fruit, maple syrups, fruit syrups, icing sugar, coconut bacon, the possibilities are endless, really. ❤

We also made my favourite homemade chai, the recipe of which can be found by clicking on the hyperlink! Cinnamon, nutmeg, and cozy, warming spices were definitely our theme for this lazy brunch morning! I am soooo ready for you, fall! COME AT ME BRO.

Oh also, I am having puppy sleepovers with our family dog Benson right now and he is the actual cutest.  So look at him.
