Side Dish Saturdays ft. Stuffed Twice Baked Potatoes

Hi friends! This entry is going to be short and I am going to talk about turning one of the most boring ways to eat a potato into a more exciting way to eat the same potato. When I was a kid, we ate a lot of baked potatoes with our meals. Always a “protein,” veggie, and baked potato in typical 90s nuclear family fashion. When I finally started experimenting with vegetarianism (or “not eating meat because chicken is a real chicken and veal is a baby cow”), at first I totally relied on side dishes, so I was constantly finding ways to make my baked potatoes more exciting! These days, this is my favourite way. Served up with an Apple Sage Field Roast sausage and crispy kale

Ingredients:
4 medium sized potatoes, cleaned and sliced in half
3 tbsp vegan margarine
2 tbsp nutritional yeast
1/2 cup chopped broccoli
handful of sliced green onions
1/4 cup fresh dill, chopped
1 tsp garlic powder
salt and pepper to taste
*optional ingredient: a handful of your favourite vegan cheese, shredded

Instructions
-Preheat oven to 400 degrees fahrenheit and bake potatoes for 20-30 minutes or until pierce-able with a fork. If you bake your potatoes in a microwave you can do that too, just don’t tell me about it.
-Once potatoes are finished baking, remove from oven to cool, and lower heat to about 350 degrees fahrenheit.
-When cool enough to touch, carefully scoop out potato filling into a bowl, leaving enough room that the skin remains in tact.
-Mash potato filling with margarine, nutritional yeast, broccoli, green onions, dill, and garlic. Taste for salt and pepper. If you’re into the vegan cheese thing, you can also at this point include some.
-Refill the shells with your new yummy potato mixture! Optionally, you can brush some melted margarine or put a little more vegan cheese on top.
-Bake until heated through, about 15-20 minutes.
EEEEAT!

Also, there was a laughable debate between boyfran and I over whether one calls this a STUFFED POTATO or a TWICE BAKED POTATO, so I’ve kind of decided it’s called both. Sorry not sorry if you think otherwise. ENJOY and have a lovely weekend! 🙂
