I don’t really know where my love for gravy has been all my life. I’d never been much of a gravy enthusiast growing up. I’ve always preferred my food dry and boring, or with my other favourite condiments, siracha or ketchup. I have never embraced Canadian novelties such as poutine, most likely because anything claiming to be a poutine in tumbleweed Alberta growing up was probably served in a hockey arena concession or truck stop and the greasiest inauthentic thing ever. A lot of my vegan friends have been obsessed with replicating the art of the poutine, and I’ve always rolled my eyes and continue to chase dreams of the perfect vegan bacon, creme brûlée, and other unobtainable arts.
Then I started having dinner hangs with my friends who are stock and gravy MASTERS. And they started making me VEGAN GRAVY and it was REALLY GOOD, because it came from veggie broth and a select few other ingredients. Then, the other day I picked up some vegan cutlets from my pals at Hearts Choices, and I actually CRAVED gravy. Like, I thought about it on my own and how I wanted to put it on something. WHICH HAS NEVER HAPPENED.
So, I consulted the internet for vegetarian gravy that won’t take hours, and think I may have successfully almagamated my research into something I actually want to put in my mouth. Here goes!
Ingredients:
1 herbal bouillon cube+ 2 cups water
1 tbsp vegan margarine
2 tbsp nutritional yeast
1 tbsp braggs liquid aminos
1 tsp summer savoury (my new favourite herb, but you can use rosemary or thyme)
1 tsp garlic powder
1/3 cup of flour
Instructions:
1. Bring water to a boil and add herbal bouillon. Add Braggs, then lower heat and stir in all other ingredients, whisking constantly.
2. After ensuring there are no lumps, remove from heat and pour this on every possible edible vegan thing you can think of.
This recipe is seriously the easiest and doesn’t require one to cook an entire vegan roast or something just to collect the jus, or even make their own stock if they don’t want to! I enjoyed this gravy on vegan cutlets from Hearts Choices, atop of herbed mashed potatoes and crispy kale. Hope you enjoy ❤
