Chai Spice Soy Milk Soft Serve!

So, the other day a good friend of mine told me that I could hack an ice cube tray to make ice cream and I’m not sure my life will ever be the same again. Last night I experienced the deliciousness that is ice cube tray+food processor ice cream and my life will never be the same again. I obviously can’t take credit for this ingenious life hack as someone has obviously done it before me, but here is how I made mine, and maybe you can go from there!

1 cup non-dairy milk (I used soy, next time will use coconut milk)
2 tbsp agave nectar or maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
pinches of coriander and cloves
1 tsp xanthum gum

-In a large glass measuring cup, pour 1 cup of non dairy milk. Stir together with remaining ingredients until smooth.
-Pour into a clean, empty ice cube tray and freeze overnight.
-Have every intention to make your ice cream the following day but then forget about it because you were presented with a dozen donuts the same day and wanted to shove them all in your face.
-Proceed. Remove cubes from tray and place in the food processor. Pour in a little more non dairy milk and pulse until smooth and creamy. At this point you can also add any finishing touches if you wanted to blend in cookie crumbs, more sweetener or spices.
-Best served in cute little teacups. Makes probably 2-4 servings depending on how greedy you are. I am very greedy.
