Grainy Mustard and Dill Potato Salad <3

Oh my goodness- how did I let time escape me so easily the past month?! I’m sorry for my absence lovelies…though I hope everyone is having a fantastic enough summer not to notice!

Time has flown by over here! I can’t believe that Blue Rose Baking Co. has already been operating for two full months. It has been a fun (and sometimes bumpy ride), but things seem on course and going alright! We have really been enjoying our time at 124 Grand Market and will be slinging treats there until October! We are also on the path to supplying some local cafes with our treats, so stay tuned for more on that as well!

I’m finding that one of the most challenging things about entrepreneurship/baking is actually remembering to FEED MYSELF PROPERLY. I think that’s partially why I’ve barely blogged. Truth be told, on my kitchen days, I’m lucky if I can squeeze in some fresh fruit, or if we maybe remember dinner in time to order a pizza later. Anyways, after making a cafe delivery this morning, I decided the rest of my business errands could be pushed until tomorrow morning, and that today was about filling our fridge with nourishing fresh fruits and vegetables. So, for dinner, I’ve thrown together a gorgeous potato salad and plan to save some in the fridge, alongside chickpea salad, slabs of marinated tofu, etc so I always have a meal ready!

Grainy Mustard and Dill Potato Salad

1 pound potatoes, cubed
1/4 cup olive oil
1/3 cup lemon juice
1/3 cup grainy mustard
1/4 cup fresh dill, chopped
1/2 red onion, chopped
1/2 red bell pepper, chopped
1/4 cup green onions
salt and pepper to taste

-Put water to a boil, adding a little salt. Cook potatoes until tender and set aside until cooled.
-Mix together lemon juice, oil, and mustard in a small bowl.
-Toss together veggies and herbs with potatoes in a large bowl.
-Add lemon juice and mustard mixture, salt and pepper.


This allows for about 4-6 servings depending how hungry you are, and whether you are treating it as a side (pffft), or potatoes as a whole meal (this lady right here)!
