Ladies and gentlemen, burn your calendars. It is officially winter. At least here.
To celebrate the first snow of the season, I visited some friends and did what any good friend does- messed up their kitchen and made pumpkin waffles! The recipe is a mashup of a few of my favourites, I’m pretty sure.
Ingredients:
1 cup vanilla soy milk
1.5 cup all purpose flour
1.5 tsp baking powder
2-3 tbsp melted margarine
3/4 cup pumpkin
3 tbsp sweetener
1 tbsp non dairy yogurt
1 tsp each cinnamon, nutmeg, ginger, cloves
pinch of salt
Instructions:
– Mix together wet ingredients and spices, then slowly mix in dry ingredients as well.
– Spread evenly into waffle maker and hope that waffle maker doesn’t decide to kill you or your waffles. By either burning your hands when you’re impatient and go to check on them, or by deciding to split your waffles in half from the inside. Both equally painful things.
Serves 3-4 folks. ❤
We served these with some coconut whip, and maple agave and enjoyed them with some healthy looking hot cereal, and a seasonal tea that tastes like apple pie! Hope everyone else had a lovely snowy Sunday!
